There’s something about those first days of fall in New York City that just feels magical. That slight, crisp chill in the air, the golden quality of the light, and of course, the warm, comforting flavors and foods… there’s nothing quite like it.

To celebrate the very first signs of fall, we created a nourishing autumnal salad with roasted squash and our take on the seasonal pumpkin craze—a protein-packed dressing made with our Sprouted Pumpkin Seed Butter.

Kabocha Squash + Lotus Root Salad with Creamy Miso Pumpkin Dressing

Serves 1

For The Salad

¼ of a kabocha squash, peeled and cut into ½” cubes

½ cup sliced lotus root

1-2 tbsp extra virgin olive oil3 oz. kale (or other leafy greens)

1 tbsp toasted pumpkin seeds

1 tbsp hemp seeds


For The Dressing

1 tsp white miso

2 tsp Sakara Sprouted Pumpkin Seed Butter

2 tsp fresh lime juice

½ tsp fresh grated ginger

1 tsp gluten-free tamari

2 tsp sesame oil

1 tbsp extra virgin olive oil

pinch of Himalayan salt

ONE

Preheat oven to 350 degrees. Toss cubed squash with olive oil, salt and pepper. Arrange on baking sheet in a single layer and roast for about 20 minutes.

TWO

While the squash is roasting, prepare the lotus root: Peel and cut crosswise into 1/8”-thick rounds and sauté gently in olive oil until soft (around 2–3 minutes). Season with salt and pepper.

THREE

Rinse and dry greens and set aside. Prepare the dressing by whisking all ingredients together.

FOUR

Arrange greens on serving plate. Top with slices of roasted squash and sautéed lotus root. Drizzle with dressing and garnish with toasted pumpkin seeds and hemp seeds. Enjoy!
