We talked #skinhappyfood with the team known for changing bodies (and skin) through the power of food as medicine.

There’s something about those first days of fall in New York City that just feels magical. That slight, crisp chill in the air, the golden quality of the light, and of course, the warm, comforting flavors and foods… there’s nothing quite like it.
To celebrate the very first signs of fall, we created a nourishing autumnal salad with roasted squash and our take on the seasonal pumpkin craze—a protein-packed dressing made with our Sprouted Pumpkin Seed Butter.
This meal is packed with body and beauty benefits. Kabocha squash gets its bright orange color from beta-carotene, a cell-defending antioxidant that’s converted to Vitamin A in your body for bright, even, youthful skin. And the fermented miso in our Creamy Miso Pumpkin Dressing contains active probiotic cultures to nourish your gut bacteria, which work hard to reduce inflammation and clear blemishes. Lotus root is a treasured ingredient in traditional Chinese medicine, thought to cool and bring balance to the body. Finally, the protein and healthy fats in hemp seeds boost cell regeneration and nourish cell membranes for a fresh-from-a-facial complexion.

Preheat oven to 350 degrees. Toss cubed squash with olive oil, salt and pepper. Arrange on baking sheet in a single layer and roast for about 20 minutes.
While the squash is roasting, prepare the lotus root: Peel and cut crosswise into 1/8”-thick rounds and sauté gently in olive oil until soft (around 2–3 minutes). Season with salt and pepper.
Rinse and dry greens and set aside. Prepare the dressing by whisking all ingredients together.
Arrange greens on serving plate. Top with slices of roasted squash and sautéed lotus root. Drizzle with dressing and garnish with toasted pumpkin seeds and hemp seeds. Enjoy!
